The program I use for timing my runs is called LiveSplit. You can find it here, along with some other nifty alternatives and utilities.
I have a fairly complex setup consisting of 3 computers and multiple consoles. It spans 2 rooms and 5 "Stations" (Desktop, Couch, Retro PC, Arcade, Arcade Nook) that I can switch between without restarting my streaming software. All video streams feed into my "Primary PC," which ultimately runs the show.

I also have a MiSTer FPGA plugged into the cabinet that I can switch to with the push of 3 buttons (generic USB / HDMI and Audio Switchers)
This is a makeshift nook that I set up next to my computer for a more "authentic" arcade experience, complete with YOKO (Horizontal) and TATE (Veritcal) Orientation VGA Monitors. I can play games off of my Primary PC, Consoles and MiSTer.

They're dirt cheap ($10-25 depending on seller), 720p60fps and I swear by them. For multi-cam/multi-device setups, they are a godsend on a shoestring budget.

For wireless scene transitions, I use a cheap contractless Android phone dedicated soley to controlling OBS. Highly recommended over a Stream Deck, as it costs less than 1/3 the price and offers more functionality (such as wireless).

-Controllers: I have OEM controllers for all consoles listed above. When playing on my MiSTer FPGA, I generally prefer to use a Super Nintendo controller.
Most all of my consoles are RGB/Component capable, and I run them through a fairly complex chain of hardware which I'll do my best to describe. All Coaxial/RCA/S-Video consoles are converted to Component and thus compatible with all hardware detailed below.
-RGB -> Component Converter: Shinybow SCART -> Component Converter. All of my retro SCART/RGB hardware is converted to Component for compatibility across screens. This also replaces the need for an external RGB sync device.
Composite -> Component Converter: Koryuu (this device allows all my Coaxial/RCA/S-Video consoles to work within my Component Video chain)
-SCART / RGB Switcher: Bandridge SCART Switch
-Component Switcher: Extron Crosspoint 300 (also serves as a Distribution Amplifier which sends video feeds to 2 TVs and my Capture Device)
-Line Doubler / Upscaler: OSSC (Open Source Scan Converter, converts RGB/Component video to HDMI)
-HDMI Switcher: Generic auto-detecting HDMI Switcher. Whenever a new HDMI signal is active, it overrides the previous one. Used for all HDMI Consoles, MiSTer FPGA and OSSC.
I use a Garmin Heart Rate Monitor to detect my heart rate, and software called Golden Cheetah to customize its appearance on stream. Instructions can be found in this Reddit post by Darbian.
In the event that I have Eye Tracking enabled, the hardware responsible is the Tobii 4c Eye Tracker. The software (and Twitch Extension) is called Tobii Ghost. This allows viewers of the stream to customize or disable the eye tracker on their end.
